Food when Glamping doesn’t have be hot dogs on a stick and S’Mores.                                                                                                                                                                                                  (Especially when the hot dogs are so often burned).                                                                                                                                                                                                                               Meals can be Gourmet level, while being easy to prepare.

                                                                                                                         

1. CAMPFIRE FLATBREAD PIZZA

   Ingredients:

           • Flatbread or pre-made pizza crust
           • Pizza sauce
           • Shredded mozzarella cheese
           • Toppings: bell peppers, onions, mushrooms, pepperoni, olives, etc.

   Cooking Instructions:

1. Lay out your flatbread and spread a thin layer of pizza sauce.
2. Add toppings and cheese.
3. Place flatbread on a grill grate over the campfire or on a portable camp grill.                                                                                                                                                                                                                                        4.  Cook until cheese is melted and the bottom is crispy.

 

2. GRILLED CORN ON THE COB WITH HERB BUTTER

   Ingredients:

• Fresh corn on the cob
• Butter, softened
• Fresh herbs (parsley, chives, etc.), finely chopped
• Salt & pepper

 

  Cooking Instructions:

1. Mix softened butter with chopped herbs, salt, and pepper.
2. Peel back the corn husks without removing them entirely. Remove the silk.
3. Slather the corn with the herb butter and reposition the husks.
4. Grill over a campfire or portable grill, turning occasionally, until cooked.

3. Skewered Caprese Salad

 Ingredients:

• Cherry tomatoes
• Fresh mozzarella balls
• Fresh basil leaves
• Balsamic glaze
• Olive oil, salt, & pepper

  Instructions:

1. Skewer a cherry tomato, basil leaf, and mozzarella ball in succession.
2. Drizzle with olive oil and balsamic glaze. Season with salt and pepper.

4. One-Pot Lemon Herb Chicken & Rice

       • Ingredients:

  • Boneless chicken breasts or thighs
• 1 cup rice
• 2 cups chicken broth
• 1 lemon, zest and juice
• Fresh herbs (thyme, rosemary, etc.)
• Salt, pepper, & olive oil

Instructions:

1. In a camp pot, brown the chicken in olive oil. Remove and set aside.
2. Add rice, chicken broth, lemon zest, juice, and herbs.
3. Place the chicken back in the pot, cover, and let simmer until rice is cooked.

5. Campfire Stuffed Bell Peppers

  Ingredients:

 • Large bell peppers
• Cooked quinoa or rice
• Canned black beans, drained
• Corn kernels
• Shredded cheese
• Salt, pepper, & favorite spices (like cumin or chili powder)

Instructions:

1. Cut off the tops of the bell peppers and remove the seeds.
2. In a bowl, mix quinoa/rice, beans, corn, cheese, and spices.
3. Stuff the bell peppers with the mixture.
4. Wrap each pepper in foil and place on campfire coals or grill. Cook until the pepper is tender.

 

6. Grilled Portobello Mushrooms – This is truly Glamping

Ingredients:

 • Large portobello mushroom caps
• Olive oil
• Balsamic vinegar
• Minced garlic
• Salt & pepper

• Instructions:

1. Mix olive oil, balsamic vinegar, garlic, salt, and pepper.
2. Brush the mixture over the mushroom caps.
3. Grill mushroom caps until tender.

 

7. Banana Boat S’mores

Ingredients:

• Bananas
• Chocolate chips
• Mini marshmallows
• Graham cracker crumbs

• Instructions:

1. Slice a banana lengthwise, creating a pocket.
2. Fill the pocket with chocolate chips, marshmallows, and graham cracker crumbs.
3. Wrap in foil and place on campfire coals until the contents are melted.

 

8. Campfire Grilled Salmon

Ingredients:

• Salmon fillets
• Lemon slices
• Fresh dill
• Olive oil, salt, & pepper

Instructions:

1. Place each salmon fillet on a piece of foil.
2. Top with lemon slices, dill, olive oil, salt, and pepper.
3. Fold the foil around the salmon, creating a packet.
4. Grill over campfire or portable grill until salmon is cooked through.

 

9. Creamy One-Pot Pasta

• Ingredients:

• Pasta of choice
• Diced tomatoes (canned or fresh)
• Minced garlic
• Cream (or milk for a lighter version)
• Fresh basil or parsley
• Grated Parmesan cheese
• Salt, pepper, & olive oil

• Instructions:

1. In a camp pot, sauté garlic in olive oil.
2. Add tomatoes, pasta, and enough water to cover the pasta. Cook until pasta is nearly done.
3. Stir in cream and cheese. Cook until sauce is creamy.
4. Garnish with fresh herbs.

 

10. Campfire Quesadillas

Ingredients:

• Large tortillas
• Shredded cheese
• Cooked chicken or beans
• Sliced bell peppers and onions
• Salsa or guacamole for serving

Instructions:

1. Lay out a tortilla and sprinkle one half with cheese, chicken/beans, peppers, and onions. Fold the other half over.
2. Wrap in foil and grill on a campfire grate or portable grill.
3. Cook until the outside is crispy and the cheese is melted. Serve with salsa or guacamole.
Remember to adjust seasonings to your taste and feel free to be creative with ingredient combinations.
